Mushroom, Tomato, Basil Frittata
Prep and Cook Time: 20 minutes
Ingredients:
- 1/2 medium onion, minced
- 3 medium cloves garlic, pressed
- 1 TBS +1 TBS chicken broth
- 1 cup thinly sliced crimini mushrooms
- 1/2 medium tomato, seeds removed, diced
- 3 large eggs
- 3 TBS chopped fresh basil
- salt and black pepper to taste
Directions:
- Mince onions and press garlic and let sit for 5 minutes to bring out their hidden health benefits.
- Heat 1 TBS broth in a 10-inch stainless steel skillet. Healthy Sauté onion over medium low heat for 3 minutes, stirring frequently.
- Add garlic and mushrooms and continue to sauté for another 2 minutes.
- Add 1 TBS broth, tomato, salt, and pepper and cook for another minute. Stir well, and gently scrape pan with a wooden spoon to remove any slight burning.
- Beat eggs well, and season with salt and pepper. Mix in chopped basil. Pour eggs over vegetables evenly and turn heat to low. Cover and cook for about 5 minutes, or until firm. Cut into wedges and serve.

I actually had a waffle with yogurt today for breakfast. It was beautiful.
Ricotta Stuffed Tomatoes
- 9 medium summer tomatoes (firm)
- 15 ounces ricotta
- 1/4 cup grated Parmesan
- 1 egg
- 12 big basil leaves, julienned
- 3/4 tsp salt
- 3 shakes nutmeg
- 15 grinds fresh pepper
- Preheat oven to 350 degrees.
- Cut the top of the tomatoes off and hollow them out being careful not to rip them up (you can see in the picture that I ripped a couple of mine).
- In a big bowl mix all the remaining ingredients using a fork so that the egg gets broken and mixed in well.
- Place the tomatoes in a pie dish and fill each one up with the ricotta mixture making sure to heap it up at the top a little.
- Bake in the oven for 30 minutes. Then turn your oven broiler on and broil them until the tops turn golden.
Zucchini Pizza Bites
Ingredients:
- 4 slices large zucchini 1/4” thick (or 1 medium zucchini cut on diagnal)
- Spray olive oil (I used my Misto)
- 2 tbsp pizza sauce
- 1/4 cup part skim mozzarella
- salt and pepper
Method:
1) Cut zucchini about 1/4 inch thick. Spray both side lightly with oil and season with salt and pepper.
2) Broil or grill for about 2 minute on each side. Top with sauce and cheese and broil for an additional minute or two. (Careful not to burn cheese)
