Mushroom, Tomato, Basil Frittata
Prep and Cook Time: 20  minutes Ingredients:
1/2 medium onion, minced
3 medium cloves garlic, pressed
1 TBS +1 TBS chicken broth
1 cup thinly sliced crimini mushrooms
1/2 medium tomato, seeds removed, diced
3 large eggs
3 TBS chopped fresh basil
salt and black pepper to taste
Directions:
Mince onions and press garlic and let sit for 5 minutes to bring out their hidden health benefits. 
Heat 1 TBS broth in a 10-inch stainless steel skillet. Healthy Sauté onion over medium low heat for 3 minutes, stirring frequently. 
Add garlic and mushrooms and continue to sauté for another 2 minutes. 
Add 1 TBS broth, tomato, salt, and pepper and cook for another  minute. Stir well, and gently scrape  pan with a wooden spoon to remove  any slight burning. 
Beat eggs well, and season with salt and pepper. Mix in chopped  basil. Pour eggs over vegetables evenly and turn heat to low. Cover and  cook for about 5 minutes, or until firm. Cut into wedges and serve.
Serves 2

I actually had a waffle with yogurt today for breakfast. It was beautiful.

Ricotta Stuffed Tomatoes
9 medium summer tomatoes (firm) 
15 ounces ricotta 
1/4 cup grated Parmesan 
1 egg 
12 big basil leaves, julienned 
3/4 tsp salt 
3 shakes nutmeg 
15 grinds fresh pepper
Preheat oven to 350 degrees. 
Cut the top of the tomatoes off and hollow them out being careful not to rip them up (you can see in the picture that I ripped a couple of mine). 
In a big bowl mix all the remaining ingredients using a fork so that the egg gets broken and mixed in well. 
Place the tomatoes in a pie dish and fill each one up with the ricotta mixture making sure to heap it up at the top a little. 
Bake in the oven for 30 minutes.  Then turn your oven broiler on and broil them until the tops turn golden.

Zucchini Pizza Bites

Ingredients:

4 slices large zucchini 1/4” thick (or 1 medium zucchini cut on diagnal)
Spray olive oil (I used my Misto)
2 tbsp pizza sauce
1/4 cup part skim mozzarella
salt and pepper
Method:
1) Cut zucchini about 1/4 inch thick. Spray both side lightly with oil and season with salt and pepper. 
2) Broil or grill for about 2 minute on each side. Top with sauce and cheese and broil for an additional minute or two. (Careful not to burn cheese)
